今天上了这道锦鲤鱼果冻,顺便在这里向大家拜个早年,希望你们年年有馀!Ann送的锦鲤鱼果冻模可以派上用场了,谢谢她的贴心礼物。
Last
Chinese New Year, I saw Ann@Anncoo Journal and Sonia@Nasi Lemak Lover made this
Koi Fish Jelly which I adored very much. Thanks to Ann for the fish moulds, now
I can make them myself.
脱模後的锦鲤鱼果冻看起来有点像真的锦鲤鱼,也可爱极了!
I am so happy to see 12 Koi fish
“swimming” happily on my plate!
Fish
is commonly served on the Chinese New Year because it has a symbolism of having
surplus/leftovers(money) in one family. No matter it is steamed fish, fried
fish or this fish jelly, people just like to see fish on this special festival!
I’m
submitting this post to Chinese New Year Delights 2013, hosted by Sonia@Nasi Lemak Lover.
锦鲤鱼果冻 Koi Fish Jelly
(Recipe Source: Ann@Anncoo Journal)
Makes 12
Ingredients
500ml Water
80g Caster Sugar
9g Agar-agar Powder
2 Pandan Leaves, tied into knots
150ml Fresh Milk
24 Small Black Currants
Red Food Colouring, 2-3 drops
Yellow Food Colouring, 2-3 drops
2 Fish Jelly Moulds
Method:
1. Roll the small currants into balls as fish eyes. Alternatively, cut 12 black currants into
half and roll into balls.
2. Bring water, sugar, agar-agar powder and pandan leaves to
boil over medium heat, stir every now and then.
Turn off the heat and keep stirring for another 2 minutes. Discard the
pandan leaves.
3. Dip a black currant into the agar-agar liquid then very
quickly, place it onto the fish mould eye. Hold on the currant until it sticks
to the mould. Repeat for the rest of the currants.
4. Take 3 teaspoons of agar-agar liquid and place into a sauce
dish. Add 2-3 drops of red food colouring.
Mix well and heat up in the microwave(covered) for 6 seconds.
5. Using the back of a small teaspoon(I used a 1/2tsp measurement
spoon), smear the red agar-agar liquid quickly onto the fish mould body. Repeat
for the rest of the fish mould bodies.
6. Repeat (4) & (5) for yellow food colouring.
Let to set. I made 3 red Koi fish and 9 red-yellowish koi fish.
7. Reboil the plain agar-agar liquid. Turn off the heat, add
fresh milk. Continue to stir for 3 minutes. With a small ladle, fill up the moulds with the agar-agar liquid. If it is too hot, cool down a bit before filling up.
8. Refrigerate for at least 2-3 hours before removing from the
moulds.
Wishing
everyone “年年有餘”(Nian Nian Yiu Yu)!

I know lah, you have been busy for the CNY, it's ok!
DeleteHi Jessie,
ReplyDeleteI live in Vancouver, B.C. We have a huge asian community. I've tried going everywhere looking for the blackcurrants and still no luck. What else can i replace with those eyes?
Thanx,
Pandawifey
Hi, Pandawifey, the blackcurrants are usually available in the western supermarket. If not, may be try the dried prunes which are selling in the asian grocery stores. Cut them in small pieces and roll into balls. Alternatively, you may even try red beans or black beans. It's your call whether you need to cook the beans until edible or just just the raw ones(washed). But if they are raw, you have to remind those people who are eating them that leave the eyes alone. What do you think? Gong Hei Fatt Choy!
DeleteHi Jessie, wow.. your koi fish look so cute and pretty. Too pretty to be eaten. I'm sure your children love it very much. Best regards.
ReplyDeleteWah, sekali leave so many messages, feel so touched ah!
