Sweet Potato Bread with Sultanas 提子甜薯面包


Hi all, how's your day so far?  It has been a while since I last posted a bread recipe so how about having a Sweet Potato Bread for supper today?      I made these bread before I posted my Lemon Curd Brioche Croissants & I think it's time to post this finally. 
This bread is using the direct method to make. Easy, simple & you can add any dried fruits or seeds as you like! Enjoy the recipe! 
Sweet Potato Bread with Sultanas:
提子甜薯面包:
(Using The Kitchen 70’s Recipe.  Original Recipe is from Alan Ooi)
Makes 11 Bread in different sizes & shapes
Ingredients:
350g Bread Flour, sifted
55g Caster Sugar
2tsp Instant Dried Yeast
10g Formula Milk Powder
Pinch of Salt
135g Cold Water
1 Egg Yolk
120g Sweet Potato Puree 
50g Butter, room temperature
50g Sultanas
1 Egg, beaten, for brushing

Method:
1. Mix the first 5 ingredients in a big mixing bowl with a spatula.  Fit in the dough hook to the electric mixer, add water & start mixing the dough at low speed.  Add egg yolk & sweet potato puree, mix till well-combined for each addition. 
2. With medium speed, knead the dough for 5 minutes. Add butter & continue to knead until the dough is smooth & elastic(for about 15-18 minutes).  Click here to check whether the dough is ready or not.
3. Add sultanas & mix with a spatula.
4. Spray some water on the dough.  Start the 1st proof for 35-40 minutes in a warm place.
5. The original recipe is to divide the dough into 6 equal portions. I divided the dough into 12 equal portions(which I then used to make 11 bread). Shape each small dough into ball. Rest for 15 minutes.
6. With rolling pin, roll out each small dough into oval shape. Roll up like a swiss roll. Place the dough into disposable paper moulds/cupcake liners.  Spray with some water & start the final proof for 40 minutes.
7. 10 minutes before the final proof finish, turn on the oven at 160C.  Brush the dough with some egg.  Bake for 15-20 minutes or until cook.

    Nice potato breads. How come you have the DJ wooden carton?

      I actually forgot how we got the DJ wooden carton. I think someone had given us a X'mas hamper a long time ago & I've forgotten about it till 1 day, I was cleaning up some files in my guest room , I saw it filling up with some paper files. Wah, seeing that is like seeing gold! It's a nice carton, great potential in taking photo!And it's free! And yesterday 2 days ago while I was cleaning my pantry, I found another wooden carton, similar size with wording "storage!" I forgot when I bought it. I'm going to gorek that out 1 day & used it to take picture!

      You better go to check your storage room, you may find some treasures like I did, hahaha! Hey, girl, I bought a new wooden tray the other day, I like it very much. A good bargain, just $11.99! It is in natural wood colour without any paint, some more with some very nice engravements, ah, love it! Show it to you later in my chiffon posting!

      Forgot to mention that this bread took a quicker time to proof for the 1st time, only 40 minutes instead of 50-60 minutes. Don't let it proof for too long, the bread may not taste nice!

      I'm using Kenwood, bought it few months ago when it was on sale. I need to check the actual model for that. I'm not really sure about other brands because this is my 1st stand mixer. In US, KitchenAid is very popular but it's a bit expensive for me to buy! You should also ask other friends about their mixers. I don't use it very often, so far so good. In fact, I dropped it once to the floor from the kitchen top when I made the lemon curd brioche croissants, nothing was broken, kind of lucky!

      I used 橙番薯 & small size. Don't know whether the size matter or not but the colour of the sweet potatoes look very orangy before cooking!

      At this time of the year, it is best to eat after heating up for few seconds in the microwave coz it's quite cold here lately! If I compare this bread with the cranberry "pai bao," the latter is softer when eating on the next day but again, the best is to heat up for about 6-8 second in the microwave due to the weather circumstance!
